Keep to proportions in recipe
Ok made some jam, always works well. More expensive than white desert sugar.

Err...
I've been looking for cheaper jam sugar (with pectin) and thought to look here. Wow. Did you know you can get this stuff at any of the big supermarkets for £1.98/£1.99? (May 2012) That's quite some mark-up!This jam sugar works really, really well though. I actually use 1.2kg of mixed red fruit to 1kg of the sugar and it still sets to perfection with a slight zing to the jam. They do say that you can't store it for quite as long with this proportion of fruit-to-sugar, but it never lasts long enough to test the theory!
