The main impact is on the colour and texture, it should not compromise the taste. This process naturally happens as it is a way to preserve the flavour and quality characteristics of your honey. Natural honey has a high content of sugars, mainly glucose and fructose. Out of the two, the glucose has lower solubility and will start crystallising first. If your honey is semi-liquid, you can see crystals of glucose in the jar.\nEvery honey has different amount of glucose and fructose and therefore crystallisation will start sooner or later. For example, Acacia and Honeydew honey have lower content of glucose than Linden, and therefore these will start crystallising later. But be aware Acacia and Honeydew will crystallise eventually too.\nThe best way to delay any crystallisation is by storing your jar at room temperature rather than in the fridge for example. However, should you want to dissolve the crystals you can do this by placing the jar and its contents into warm water. Please make sure the jar is sealed as you need to ensure that water doesn't get into the jar and you must also keep the temperature below 45 degrees Celsius to preserve the enzymes and vitamins. It's a fact there is a lot of adulterated honey made by feeding bees with sugar for example. To remove such honey from the market, much more testing needs to be done on regular basis. Unless you have a local trusted beekeeper, we would like to assure you that beekeeping has been in our family for 4 generations and we do our best to nurture the bees we take care of. Part of such care is making sure the bees always have enough honey for themselves, so we don't use sugar at all.\nWe also make sure the bees we take care of are in remote areas, close to forests or in forests.
